Why Black Pepper?

Black pepper is one of the most fascinating non-fruit aromas in wine. It comes from a compound called rotundone, which is present in grape skins and becomes more pronounced in cooler climates or specific varietals. It’s also one of those aromas that can “click” once you’ve smelled it in isolation—hence why we chose it for this sensory surprise.
